Description: In the mid-1800s, the British established coffee plantations in India, finding the warm climate, high altitudes, sunshine, abundant rainfall and rich, well-drained soil ideal for coffee cultivation. The coffee was shipped from India around the Cape of Good Hope to Great Britain, a voyage that took up to six weeks. During that time, the coffee beans were exposed to variations in temperature and humidity in the wooden vessels, resulting in distinctly flavored beans. Today, the process of “monsooning” Indian coffee beans seeks to consistently replicate the changes that used to occur on the long ocean voyages. Carried out on the West Coast of India, the monsooning process exposes high quality Arabica Cherry beans to the monsoon winds that blow from June through September off the Arabian Sea. At the end of the monsoon season, the beans are moved to a drier climate for additional storage. Because the beans absorb moisture in stages, they swell up, turn from green to pale gold, and lose much of their acidity. You are sure to enjoy the enticing aroma and the mellow flavor of this uniquely processed bean.
